The last row is the most reliable and the least used. A thing found later, when you are not standing there, removes every timing problem — and the performance, which is often the part that makes a surprise uncomfortable rather than nice.

- The thing he mentioned three weeks ago, on the desk, unwrapped, no note

Each takes under a minute, and none can be spoiled by him coming home early.
The ones worth an evening
If you have the house and a couple of hours: cook the thing from his hometown, and set it up properly rather than doing three things half well. One well-executed thing beats a scattering — balloons and a cake and a gift, none of it quite finished, is the usual mistake.
