Ask anyone who travels where their photographs are and the answer is a phone, a laptop, and possibly a hard drive nobody has opened since 2021. The trips exist as a scroll, not as a thing.
That is the gap, and it is a real one: the archive is enormous and completely unusable. The reason nobody fixes it is that the edit is genuinely tedious — thousands of images, and the person who took them is the worst-placed person to cut them.
You are well placed. You were not there for half of it, so you have no attachment to the seventh photograph of the same doorway.

The next trip
The strongest non-object gift here is removing a decision rather than paying for one. Anyone can contribute to a fund. Booking the specific night in the specific place she has had open in a tab for four months is a different gift.

The consumable
Weight is the whole constraint. Anything that goes in a bag and does not come back is allowed:

The pre-stamped postcards are the one people remember. It costs almost nothing and it converts her trip into something that arrives at your house for a month afterwards.
When not to buy any of this
When she is mid-trip. A parcel arriving at an address she is not at is a problem, not a present. Wait until she is home.
When she is saving for a specific trip. Money towards it beats an object, and pretending otherwise is you buying the gift you wanted to give.
When the archive is not there. If most of the travelling happened before you met and you do not have access to the photographs, a record made from what you can find will be thin — and a thin one is worse than none. Gifts for a newer relationship is the better place to start.
When she has told you she is trying to own less. Some people who travel a lot are deliberately shedding possessions. Take that at face value.
